Healthy Lunch Recipes


There are certain food items that are low in fat and high in protein and help in reducing weight. These food items not only limit calories from your diet but also provide essential nutrients that your body requires for maintaining good health. Here are some low calorie lunch recipes:

Healthy Low Calorie Lunch Recipes

Cherry Tomato Couscous

Whole grains are beneficial for those who want to reduce weight. Couscous is a whole grain which is a perfect substitute for white rice in curries, stews and casseroles.

Serves: This Recipe Serves 2.

Ingredients:

1. 200g couscous
2. Half punnet cherry tomatoes, sliced into halves
3. Half red capsicum, finely diced
4. Half small cucumber, deseeded and finely diced
5. Half large carrot, peeled and grated
6. Two teaspoons olive oil
7. One tablespoon lemon juice
8. Two tablespoons sliced spring onions
9. One tablespoon chopped mint
10. Sea salt and cracked black pepper to taste

Method of Preparation:

1. Bring 200ml water to the boil, add Couscous and stir through.

2. Cook over low heat for 1-2 minutes until the Couscous is swollen and looks fluffy.

3. Add olive oil and lemon juice and mix through Couscous.

4. Stir through cherry tomatoes, cucumber, capsicum, carrot, spring onions and mint.

5. Add salt and pepper to taste.

Open Pita Bread Sandwich Recipe

Open Pita Bread Sandwich with capsicum dip, green capsicum, tomato and low fat cheese makes a healthy and delicious lunch. Capsicums are rich in vitamin C, beta carotene and folate, assist in lowering blood pressure and break down cholesterol build up. If you want to add a protein source to this sandwich, add chicken breast.

Serves: This Recipe Serves 2.

Ingredients:

1. Four small pieces of pita bread
2. Two tablespoons capsicum dip
3. Half green capsicum, finely sliced
4. One small tomato, cut into 8 wedges
5. Shavings of low-fat tasty cheese

Method of Preparation:

1. Spread both sides of bread with dip.

2. Place tomato and capsicum on top, and top with tasty cheese if desired.

3. Serve immediately or toast in sandwich press if desired until golden brown.

Tuna and Tomato Pasta Salad

Tuna is a low fat and high protein food effective in reducing weight. Tuna and tomato pasta salad is a easy to prepare delicious salad. You can add a flavor tuna if you like, or just a tuna in brine or oil. You can also use penne pasta in this recipe instead of the spinal pasta.

Serves: This Recipe Serves 4 to 6.

Ingredients:

1. 500g dried spiral pasta, cooked al dente
2. 1 x 425g tin tuna drained
3. One small green capsicum, chopped
4. One large tomatoes, chopped
5. 100g green beans, blanched
6. Balsamic vinegar, to drizzle

Method of Preparation:

1. Drain cooked pasta.

2. Place into large bowl and add tuna, tomato, capsicum, beans and mix well to combine.

3. Drizzle with balsamic vinegar and serve immediately.
