  • All purpose flour - 3 tbsps
  • Shredded Cheddar cheese - 1 ½ cup
  • Lemon juice - 1 tbsp

  • Bay leaf - 1
  • Water - 2 cups

How to prepare?

Heat oil in a saucepan. Add leaks and stir for a few minutes until it becomes very soft. Now add cauliflower, bay leaf, salt, pepper, 2 cups of milk and water. Stir and boil, keeping medium-high heat. Reduce the heat and continue to cook for another 6 - 8 minutes till the cauliflower is soft. Stir occasionally.

Whisk ½ cup of milk and flour in a bowl. After removing the bay leaf, transfer the soft cauliflower into the milk mixture and stir. Cook over medium-high heat and stir till thick broth is formed. After removing from the heat, add cheese and lemon juice and stir.

Recipe for butternut squash soup

Ingredients required

  • Peeled, seeded butternut squash - 1 large (cut into 1 inch cubes)
  • Peeled carrots - 2 (chopped)
  • Potato or russet - 1 (cut into 1 inch cubes)
  • Medium onion - 1 (diced)
  • Garlic gloves - 2 (minced)
  • Olive Oil - 2 tbsps (extra virgin)
  • Water - 4 cups
  • Canned coconut milk - 1 cup
  • Salt
  • Pepper

How to prepare?

Heat the oil in a pot and add garlic, onion and salt. Stir until they become translucent. Then add squash, carrot, potato and water and boil. Lower the heat and continue cooking for 30 minutes, so that the vegetables can be pierced easily with a fork. Remove from the heat and mix coconut milk. Puree the potage in a blender and add salt and pepper to taste. Garnish with chopped parsley and virgin olive oil.
