Healthy Salad Recipes


Eating salad before taking meal is a smarter choice as they fill your stomach sooner and help you to limit your calorie intake. They consist of vitamins and fiber that are beneficial for good health. They are easy to prepare and can also be taken as healthy snacks in place of carbohydrate foods. Here are some healthy salad recipes:

Healthy Low Calorie Salad Recipes

Potato Roasted Tomato and Avocado Salad Recipe

Potato roasted tomato and avocado salad is extremely nutritious and can be taken in lunch or as a healthy side salad. Avocados provide healthy fats and roasted tomatoes are full of antioxidants, vitamins and fiber. This recipe includes low fat sour cream which tastes as good as regular sour cream but has less fat and calories.

Serves: This Recipe Serves 4.

Ingredients:

1. One tablespoon olive oil
2. 16 Chat potatoes
3. Two tablespoons light sour cream
3. Two tablespoon seeded mustard
4. One chopped avocado (skin and seed removed)
5. One small red capsicum, chopped
6. One tablespoon olive oil

Method of Preparation:

1. Preheat oven to 180 degrees (160 degrees fan forced).

2. Place cherry tomatoes on tray and drizzle with olive oil. Cook for 10 minutes or until it is light browned.

3. Cook chat potatoes until tender and slice in half.

4. Mix together sour cream and seeded mustard properly.

5. Place chat potatoes in a bowl and arrange tomatoes, capsicum and avocado on top.

6. Drizzle salad with dressing and serve straight away.

Beef Salad Recipe

Lean beef is a rich source of protein, iron and other beneficial nutrients. Beef salad is a light salad with beef slices, which is perfect for lunch.

Serves: This Recipe Serves 2.

Ingredients:

1. 250g scotch fillet steak
2. One cup snow peas, sliced in half
3. One cup grape tomatoes, halved
4. 100g salad mix

Dressing

1. ¼ cup balsamic vinegar
2. One tablespoon olive oil
3. Salt and pepper to taste
4. Pinch sugar

Method of Preparation:

1. Preheat medium frying pan over medium-high heat.

2. Place fillet in pan and cook each side for about 3 minutes.

3. Place on plate, cover with foil and set aside.

4. Arrange salad mix in bowl, place grape tomatoes and snow peas on top.

5. Slice beef into thin slices, place on salad and pour dressing over the top.

6. Serve immediately.

Chicken and Sweet Potato Salad Recipe

Skinless chicken salads are highly beneficial in weight loss as they are high in protein, low in fat and make you feel full sooner and stay in your stomach longer.

Serves: This Recipe Serves 4.

Ingredients:

1. Two medium skinless chicken breasts
2. Half cucumber sliced thinly
3. Half cup halved cherry tomatoes
4. Half sweet potato cut into circles
5. 100g mixed lettuce leaves

Dressing

1. Two Tablespoons sweet chilli sauce
2. Two tablespoons orange juice

Method of Preparation:

1. Preheat grill or sandwich press on high.

2. Cook chicken on grill until cooked well through (4 minutes each side). Set aside.

3. Place sweet potatoes on grill or sandwich press and cook until well browned, cut into cubes.

4. Cut chicken into bite size pieces and place on top of lettuce, top with cucumber, cherry tomatoes and sweet potato.

5. Mix together the sweet chilli sauce and orange juice and drizzle over the top of salad.

6. Serve immediately.
